To make this delicious recipe, You can easily combine the leaves. ugu with Uziza leaf, bitter leaf with uziza leaves, anara leaf with uziza leaf, and more.
you might be asking why I made mention of uziza leaf over and over again, it is because uziza leaf is an aromatic vegetable usually used in preparing different dishes such as ji mmiri oku, pepper soup, porridge yam, soups and porridge plantain this is because it gives out an amazing flavor.

Ingredients to Prepare Nigerian Okra Soup
- Goat meat
- Okra
- Fresh fish.. (I love using scumbia fish)
- Stockfish
- Bonga Fish or any dried fish of your choice
- onion
- periwinkle
- Fresh pepper (Tatashi and Yellow pepper).
- crayfish
- Seasoning (knorr cube)
- Red oil and Uziza leaf
- Spinach (Ugu)

This is one of the fastest soups ones can make. Remember, okra soup is meant for swallowing, like Eba, Fufu, and Semovita garri (to be Frank, I love licking okra soup).
Steps to Prepare Okra Soup
- Goatmeat is my favorite part of beef for cooking all Nigerian food. It is the king of all meat, no one is telling me otherwise. Actually, some people don’t like goat meat but, it is my brother’s favorite meat.
- Because of its amazing taste. First of all, am going to be washing my goat meat properly and then, put it inside the cooking pot.
- Cut the onion into two, peal half of it, wash and dice into tiny cubes, add to the goatmeat, Add one and a half knorr cubes to it, but half of the mivina seasoning directly to the pot then, wash the yellow pepper properly, blend and add to your cooking pot.
- Add water to the cooking pot for about the same level as the meat. this quantity of water enables the season to enter inside the meat during this process of steaming.
- Set the pot on high heat and boil for about 30mins.
As You Wait For The Goat meat To Be Partially done?
- Wash the stockfish with hot water just to remove excess dirty, wash again with cold water. Add the stockfish to your cooking pot.
- But if the stock is a hard one, boil it together with the goatmeat before add any other meat. Wash and debone your dried fish then, set it aside.
- Remove the Tatashi seed to avoid a bitter taste, cut it into tiny parts and set it aside, tatashi is meant for coloring.
- Pick the pumpkin leaves, If it is your choice of vegetable, wash them properly at least six to seven times to avoid sand in your soup.
- chop the vegetable with your chopping board or any of your cutting systems. ( Note: pumpkin leaves are just the best for okra soup.
- But for those living outside the country, just make use of frozen spinach. Remove your Ice fish intestine, wash it properly and set it aside.
- Wash your okra, make more vertical slices then cut and set aside as well…(cutting is optional) but the thinner the okra, the more it draws.
- Peal the remaining onion, cut it into tiny cubes, wash the periwinkle and set it aside. 35mins is enough to put all this together (smiles) If you are fast enough.

- Add in the washed fresh fish, the stockfish, ground crayfish, Dried fish to the cooking pot, periwinkle, put half cube of knorr, half of the diced onion.
- Add water for about the same level as the meat. With that, you can never go wrong. Add salt to taste then, cook to perfection.
- Stir the stock very well, put your palm oil, stir again, cover and simmer for about 6 to 7 mins. Add the nicely chopped okra, simmer for about 4mins, Add-in Uziza leaves.
- stir the soup, cook for about 3mins, and the pumpkin leaves(Ugu). Stir the soup again, cover, and allow for another 2mins. Your okra soup is ready, bring it down and serve it hot.
